Molten Chocolate Cake
A very happy Valentine’s day to you all. As the saying goes, “the way to a man’s heart is through his stomach,” and on Valentine’s day, that food must be chocolate. When we see molten chocolate cake on the menu of a fancy restaurant we automatically assume that it is a complicated dish to create when in fact, it’s extremely easy to make at home. This dish is rich and decadent, and is delicious when served with some vanilla ice cream.
For a personal touch, we made edible chocolate Valentine cards to give to our hubbies along with the chocolate cake. This idea dawned on us as we watched our kids write out their names over and over again on the Valentine cards they were preparing to pass out to their friends. Instead of giving our husbands cards that they would store away or toss, we thought an edible card would be more fun and tasty.
All you need to make your own edible Valentine card is: an inverted image of your choice, a piece of acetate, and either various colors of candy melts or white chocolate and assorted food gel colors. Tape your image to the back of the acetate then tape both to your work space to prevent it from moving. If you don’t have acetate, no big deal. Just use a sheet of plastic wrap instead and make sure to smooth out any wrinkles. Melt the chocolate in the microwave in 30 second intervals and mix until fully melted. Place melted chocolate into a piping bag (you can also use a plastic sandwich bag or make your own piping bag out of parchment paper) and start piping on your design. Work with one color at a time otherwise the chocolate will harden. Refrigerate your finished card for the chocolate to set.

Molten Chocolate Cake
Ingredients
- 4 oz. Bakers chocolate bitter sweet or semi-sweet depending on your preferred level of sweetness
- 1/2 cup unsalted butter 1 stick
- 1 cup powdered sugar
- 2 eggs
- 2 egg yolks
- 6 Tbsp flour
Instructions
- Preheat oven to 425℉ and butter 6 ramekins. Place on baking sheet.2. Melt the butter and chocolate in the microwave in 30 second intervals. Stir in between until completely melted. 3. Add powdered sugar and stir with a wired whisk until combined.4. Whisk in the eggs and egg yolks until combined.5. Add flour and stir until fully incorporated.6. Divide batter among the 6 ramekins.7. Bake for about 10 minutes. Depending on the size of your ramekins, you may need to bake for a shorter or longer amount of time. The sides and tops of the cakes should be solid and not wet but the center is still slightly jiggly. Check on the cakes early. You can always bake longer if needed. 8. Run a knife along the edge of the cake and place a plate on top of the ramekin. Gently invert to remove the cake. Serve immediately with ice cream.
